
in related news, last december rachel brought a recipe for vegan enchiladas to my attention - it took me two months, but I finally got to it! roasted red beets & sweet potatoes were covered in homemade roja sauce & cashew cilantro "cream." on the side is lime rice. (original recipe is taken from December 2008 vegnews by Jesse Minor).
i was apprehensive after removing them from the oven.
the recipe immediately reminded us of the flavor combinations used at Millenium - The sweetness of the root veggies with the spicy pepper sauces.

mmmmm... so glad the recipe was for ten!
